I'm a happy imapd user, and I see no problem with it - it actually requires no configuration. it does all of it's auth through PAM, which you can use to auth through any kind of module you can think of, and the only other thing that you might want to configure is the users home dir and inbox location. those aren't super easy to configure , I admit, but after doing so - I can assure you - there's nothing to it. just change three lines of code and recompile. using source RPM its a snap.
anyway, if you do want more control on your system, then I suggest you take a look at the Cyrus imapd. it's not easy to install and setup, but after you do - you should have easy control over any aspect of the system, using their own cyradmin utility or any of the various frontend, starting from a gtk+ one to a PHP web utility..

I am using the imap server that comes with redhat ( I think it is wu-imapd )
it is :
1. slow ( e.g. try pressing save-attachment-as, then stop in the middle, then try again ... )
2. hard to configure ( either change code and compile, or use it's undocumented-look-at-the-source configfile which doesn't even support basic things ... )
3. can not create subfolders via email client ( try making a folder and a folder below it, without telneting to the server )
anybody, do you know a better one ?
