err.. almost nothing? if you install a linux distribution in a server
configuration, you'd normally have both an SMTP server (sendmail) and a
POP3 server (be that the pop server from qualcomm, or from university of
washington) and an IMAP4 server (probably from washington university, or
perhaps from CMU?).

naturally, you do NOT need to have two accounts per user - that'd be
redicolous...

what you _might_ want to do, thought, is to change the default
configuration, or to replace the SMTP/POP3/IMAP servers with others (e.g.
replace SMTP with qmail, and then you should replace the pop3 server and
imap server with those that fit qmail, as well as replace your shell mail
clients - pine, elm, Mail - with some that can work with qmail's maildir
format).

regarding the configuration, you'll want to:

1. define which domain(s) you store mail for.
2. deny 3rd-party relaying, if you do not want to get your server abused
   by spammers to spam others, and to become black-listed (see
   www.orbs.org, for example).
3. configure the mail server to allow relaying from a machine that
   contacted the POP server with a correct address in the last 10 minutes.
4. possibly set up your box to allow a more secure connection to your
   pop3/imap4 servers - by default, they accept passwords that pass in
   plain-text across the internet, which is not a terribly good thing.
