I'd go for either an Asus or a Tyan board.

Tyan make excellent high-quality dual processor boards,
and Asus no less (P2B-D[S]).

If you decide to go for a coppermine processor (Tyan has
a great dual cpu board, based on the VIA chipset,
Apollo Pro 133A), make sure it is one of the models that
was certified for Dual CPU operation. There is info about
which Specs were cleared for SMP and which were not at
Intel's developer site.
