I'd suggest, if you can, to set up a serial (null-modem) cable between
the logging and the logged-to machine, and log through that cable --
it's the most foolproof way, and if you're setting up a dedicated log
host for a few servers, you can just not connect it to the network at
all, and then it's very secure too.
