I've used live_update to upgrade from 7.1 to 7.2 and it was a pain. at the
end I had a running 7.2 system, but even though it was on a weak computer
(P166) it thrashed the computer completly and all in all took most part of
the day to complete. in accordance to my aversion from upgrades, I'd still
recomend to stop the system and do the boot with CD dance, but if you have a
tough little system, and want to play with upgrading it live, I'd say that
most chances you'll get a clean upgrade, while the system usable most of the
time (of course a reboot at the end is a must).
The problem with 7.2 to 8.0 was with RPM I guess. you don't want to upgrade
an RPM major revision live. I tried to do that once (manually) and almost
made my system unusable.
