All linux distros I know come with both a mail server and a mail access
daemons for both pop3 and imap (I whole heartedly suggest the later over the
former).
But since most do come with sendmail, and it is a pain to configure (if you
want to master all its switches and options , you need to read 3 complete,
and very technical, books), I'd suggest a simpler MTA , such as postfix,
QMail or Exim.
postfix is extremly easy to configure and is a straight drop-in replacement
for sendmail
Qmail is supposed to be ultra secure, and is also relativly easy to
configure, but you need to do some stuff in order to make it "sendmail
compatible". also - it's realativly painless to give it pop-before-smtp
capapbilities, which is what you want if you want to allow remote clients to
send mail through you, and you don't want to be an open relay. it doesn't
come in pre-compiled mode, and you need to compile and install it (which is
why it doesn't get full stars on my 'easy to install' mark), but it really
is pretty easy to do it, just make sure to read all the READMEs and
INSTALLATIONs and the relevant parts of the FAQ.
Exim is also pertty easy(AFAIK - the only one I haven't tried), and it has
internal scripting language that is touted to allow you to do almost
anything you want.
