As for proper fonts:

Can anybody point me to some documentation regarding their setup?

Does mozilla embed some of the fonts it uses inside its postscript output? 

Are there any standard hebrew fonts that a postscript printer is expected
to have?

This is osmething I was hoping to avoid: If there is any problem with the
postscript output of mozilla then it should be corrected, not
worked-around.
