Several years ago, I had to restore my trashed partition table by hand,
because I did not remember exact settings, and one of the logical drives
was under a Stacker. It took me a couple of days, and finally I did
succeed, even with the Stacker. 

I was using Disk Editor from Norton Utilities. With this program, you can 
write directly to your HD, bypassing all OS related crap like FAT, 
file/directory structure, etc. This way, you cannot destroy the data.
If you are sure about your disk settings you can do it relatively easy. 
Well, more or less, since it is a bit-level job...

Win 95 will not allow you to use Norton Disk Editor. Therefore, you will 
need to boot from a DOS 6 diskette.
