most Unix vendors have courses taylored for their version of OS:

for Digital Unix, see High Tech Collage
for IRIX (SGI), see SELA
for Solaris, see Interbit (A&M teaching subdevision)
for AIX, see IBM
for HP-UX, CMS has courses but I don't remember if they do the teaching
    or some other company

At High Tech Collage a Unix/Network admin course is (or was) taught
by a member of this group
