  if you want to do it on a more or less commercial basis, use a backup
utility that is supported on both systems. There is some new stuff out in
this domain (search the web). The software is relatively inexpensive. 

  For a totally free hack, get split or dd for DOS and write a batch file. 
Under UNIX you know what to do, it will also be a shell script. The
compression utility to be used is zip (pkzip etc). Otherwise get gzip for
DOS/WIN and use that. 

  Note that some versions of tar are broken in the multi-volume support
area. You need to check yours. 

  Setting up a proper script with tmp dirs and locking works much better
here than some super-product, unless you are not to use it yourself, in
which case eye a commercial backup utility that spans the platforms you
want to cover.

  Bias warning: I use the script/batch method consistently and I wouldn't
touch something that outputs a not-in-a-well-known-format archive with a
barge pole (this includes some OLE-enhanced WinHelp and Word files
incidentally).

NOTE: You have to build at least a warning into the script un UNIX side to
handle long filenames on the way out, and to remove the ??x??x??x
permissions of imported DOS files on the way in.
