If you use XFree86, you can set the default depth (which is useful if you
use xdm and don't initiate X via xinit) by setting the DefaultColorDepth
option in the "Screen" section. For instance:
Section "Screen"
    Driver      "svga"
    Device      "My Video Card"
    Monitor     "My Monitor"
    DefaultColorDepth   16
    Subsection "Display"
        Depth       8
        Modes       "800x600" "1024x768" "1280x1024"
        ViewPort    0 0
        Virtual     1024 768
    EndSubsection
    Subsection "Display"
        Depth       16
        Modes       "800x600" "1024x768" "1280x1024"
        ViewPort    0 0
        Virtual     1024 768
    EndSubsection             
EndSection

This will have both 8 and 16 bpp modes defined, and will default to the
first valid 16 bpp mode.
