UNIX Pine Compile-time Options:

   ALLOW_CHANGING_FROM
          Determines whether users are allowed to modify the From line on
          outgoing mail. Even with this turned on, users will have to
          include From in their default-composer-hdrs or customized-hdrs
          in order to be able to edit the From line. Default is to not
          allow any changing.

so, grab the sources (if you do that, you might as well get the hebrew
version, although it lags behind the english version), compile it with the
given option (if you're lucky, your pine copy is already compiled with
this, but i wouldn't count on it), then configure your account for the
mentioned options (having the 'From' field in the default composer
headers). i think you'll still need to change the 'from' every time you
send a letter, but maybe you can set it as the default (if you find out
how, please let me know).
