And there's even a program that lets you do it. Take a look at
http://lwn.net/980514/a/resizefs.html . You need to have a registered
copy of Partition Magic 3.0 in order to download it but a quick search 
for resize2fs on FTP Search revealed that there are other places you
can download the program from. :-)

And don't forget to add -l too - otherwise it will happily include
/proc and other filesystems you might have mounted (such as /cdrom).
