Dual Celeron is not the same thing as dual Pentium. You will get a
performance boost, but not as good as you would expectr (i.e not 2X)

I use Celeron 366/128MB. When there are only 64MB, it works faster.
According to my experience, performance degradation varies somwhere
between 20-40% in gcc compilation, and no degradation at all at Quake2.
There are 128K cache memory, which should suffice to serve 64MB well but
not more than that. Therefore, I can suggest you to take single Pentium
III, you will probably take better performance.
