You should use the method you mentioned only when the 'duh' method
doesn't work for some reason (ie - messed up disc, weird multisession...)

You should create images of the original CD using the trivial

dd if=</dev/cdromdevice> of=<image.filename>

About labels: I don't use mkhybrid as a rule, but mkisofs.
The flag to set the label (called Volume ID in the CD world) is
-V. The equivalent mkisofs line to your old mkhybrid line is

mkisofs -J -V <volid> -o xxx /mnt/cdrom
