You are both right. Themes is an excellent thing to demonstrate.
Regarding to KFM: Even without it, the demonstration will be very
confusing for non-Linux users (and, to be honest, even for some of
us, like me). And the Themes are already enough if we want to
demonstrate the free choice and the configurabilty of Linux.
So you can add Themes to the list of demonstrated stuff.
